I been pondering some different ideas for my 2010 tailgating menu.

Last year I fresh ground pork to make both my Cheesy Sausage balls and my Stuffing sausage balls. They worked our pretty well the balls were easy to handle with one hand and you could still easily hold a beer in the other. All I had to do was keep the sausage balls warm. I am thinking about a tweak to the Stuffing sausage balls, I am going to try grinding some turkey breast into my balls. Last year I roasted a turkey breast on the rotisserie then chopped it up to combine with the ball mix.

How does homemade Pork Dumplings sound with some dipping sauce or potato, cheese, & onion perogies sautéed with onions served with bacon? Both can be handled with one hand?

Also if there are any new grills & smokers on the tailgating market . I keep hearing about some green egg which seems fitting for North Texas.

Man, that post could be utilized for comedy gold with the proper cutting and pasting. Is you last name Schwetty?

Hey I always share my food including my Cheesy Sausage balls and Sausage Stuffing Balls, they get around.

This is a dream come true!.

I am going to try grinding some turkey breast into my balls.

While this would be a nightmare.

The big green egg is awesome! By probably a bit big for tailgating, unless you are used to bringing a full sized grill with you, plus a bit..... It is quite tall.

It is a ceramic grill/smoker tht runs on charred wood chips. It keeps temps reasonable, avoids hotspots and also works as a slow cooker. I have cooked on one a few times and it is amazing! Never gives you dry meat and keeps hot for a long time. Perfect for tailgate!

I saw there was a Small Big Green Egg as well, I am used to gas grills and I have one for tailgating that is full size made by Party King.

The buzz on these things has been outstanding, do you think they are better or worst then cooking in a full-size quality gas grill?

All good sounding items. But I think we need another idea for tailgating.

We ( you, me and the Athletic Department) , need to come up with some workable plan to get our tailgate fans to come into the stadium and be counted as Mean Green fans. In their seats before kickoff. Stay in those seats throughout the game and then spend the rest of the evening tailgating if necessary.

Now, what to do.

Should there be a horn or bell going off at 30 minutes and at 15 minutes before kickoff ? Some pretty girls walking around reminding fans to clean up the picnic and come inside ? The banning of alcohol during the game ?

I hate to think that any of these measures are needed, but they are. Our attendance would probably go up by 10 or 15% if we got our outside fans inside.

I think getting the folks out of the parking lot into the game can become a very delicate situation fast if they are forced. Raining on any body's day can cause people to just not go the next time. Winning will help though there will always be a percentage that stays in the parking lot. At some point if we are selling out the stadium we could probably afford to push these kind of rules but if we are sold out what is the point.

The best fix is winning, and playing bigger names or more regional teams at home. A round up with pretty girls you suggested might do wonders on getting things started.

The Green Egg is pretty cool and works well. They have a big one and a little one. Tractorland on Dallas Dr. in Denton carries them as does Elliott's Hardware in Grapevine, Plano, and Dallas. There was a show about bbq cook-offs and a couple of the teams used these. I like the traditional smoker myself.

Good grief, Lifer...not "in" the round up squad but "on"...you know...the group doning the "rounding up"! I don't even qualify as a "pretty boy", much less a pretty girl. :P
