Are the concession teams university employees? I think most of them are, but I know some places will bring in outside help (for example, an outside team that is fundraising) to run concessions.

I'd guess that on a bad day DATCU has 12,000 and a good day 20,000+ and on a bad day at Coliseum there might be 1,000 and a good day 4,000?  Don't get me wrong I'd love a bigger selection but the reality is that isn't going to happen.

Imagine the concourse exactly as it was before it was closed in portions for two years and you've seen it after the 2 season long construction. No idea what they were doing.  I'd guess it was something like sprinkler system upgrades or other mechanical because they didn't repaint or resign anything.

But they still can't figure out how to open any entrances facing N Texas Blvd even with the construction done. Love walking all the way up Highland to the A entrance. 🙄

You're right on the last part.  They use outside groups that sign up and get a cut for fundraising.
