Amidst all the political talk, I feel like I needed a topic on here that could get a lot of deep discussion.

Question for all:

What are your go to BBQ recipes? Propane Grill? Gas? Smoker?

What are you cooking now? What are you trying to cook? 

 

Reason for posting: I just got a propane grill and want to figure out some fun recipes to cook on there

My go to is actually a 22" Weber Kettle, which (IMO) is the greatest BBQ tool ever invented.  Everyone should have one.  I have a BGE and a gasser as well.

I like to cook chicken and hamburgers on the gasser generally, because it's quick and easy.  If I have time, I use the kettle or BGE for low and slow or steaks.  I generally use the kettle because it's so versatile.  We did 2 pork butts for the 4th, and they turned out great.  It's kind of difficult to use a gas grill for smoking, and to be honest, you'll be happier with the results from a kettle or stick burner.

Here are the butts pre-cook:

Here's a meatloaf.  Didn't sauce this one.  Yeah, you can do these on the grill.  You won't go back to the oven.

The above were all cooked on a 22" Weber grill.  Pizza is great on a grill as well.  Very versatile.  Enjoy your gasser though.  They're great too.

Yeah this is my first grill, so i want to get the basics down. I dont have room yet for another grill. TBH, i should've bought a smoker/ gas combo, but wanted to master things first

Oh absolutely.   Enjoy.  You can make delicious stuff in there.  Most of the fun with BBQ is tackling a recipe and seeing what you end up with!

You can try low and slow/indirect roasting in the gasser.  Just use burners on one side and a smoking tray.  Lots of recipes out there, but I'd suggest a pork loin or shoulder to start with.  They're easier to get good results with.

Reverse sear skinless chicken breasts. It states 10 and 10 min and 5 and 5 min, but I take it off early and let it sit lightly covered for several min. Very juicy and tasty with the right rub.

The other suggestion I would make is to invest in a good digital thermometer.  Get a regular "probe" type, and a wireless one if you can.  They're a big help on long cooks, and to accurately measure done-ness.  The other is grill gloves, and get two kinds.  The ones you handle food with, and another pair of gloves to handle grates and hot metal/grill stuff. 

The other essential BBQ tool--that all grill chefs MUST possess in whatever design desired--is below.  These are not optional:

So while I haven't tried slow cooking anything like a brisket, I have one of these that I put wood chips in for my propane grill. They do add some good flavor to grilling stuff like chicken or steaks.

I agree on the Weber kettle assessment above.  That is my "everyday" grill for cooking out and grilling burgers, steaks, chicken, chops, etc.  I also have an offset wood burning smoker for doing BBQ.  I enjoy cooking briskets, pork shoulder/butts, sausage, ribs, whole chickens and turkey.  It takes a little time to get used to it. 

Start with a bone in pork shoulder, as they are the most forgiving, a cook it low at slow at around 225 degrees.  You will know it is done when the blade bone just slides out.  I also bought the book below and it really taught me a lot.
